Red Velvet Cupcakes! :)

I find this recipe better than the recipe I have posted before, the cake is more fluffy and moist, and instead of using butter, this recipe uses oil. The rich crown of Cream Cheese Frosting makes the Red Velvet Cupcakes even better! Happy tryingg :) 
Ingredients for Red Velvet Cake:
2 1/2 cups all purpose flour
1 cup light brown sugar
1 cup granulated sugar
2 tbsp unsweetened cocoa powder
1 tsp salt
1 tsp baking soda
1 tsp baking powder
2 eggs, room temperature
1 1/2 cups oil
1 cup buttermilk, room temperature
2 tsp white distilled vinegar
2 tsp vanilla
1 tbsp red food coloring
Ingredients for Cream Cheese Frosting:
8 oz cream cheese, room temperature
1/2 cup butter, room temperature
1 teaspoon vanilla
4 cups powdered (confectioners) sugar, sifted
2 tbsp cream (double cream)
Directions for the Cake Batter :
Prepare the dry ingredients. In a bowl combine flour, brown sugar, white sugar, salt, baking soda, baking powder and cocoa powder. Use a whisk to remove any lumps and combine thoroughly.
Make the batter. In an electric mixer, beat eggs and slowly stream in oil until emulsified. Add vanilla, white vinegar and red food coloring. Combine well and slowly add the dry ingredients. The batter will thicken; keep mixing on low. With the mixer running, stream buttermilk into batter slowly. Scrape down sides of bowl and mix until thoroughly combined.
Bake. Distribute batter to prepared cake or cupcake pans and bake in a preheated 350(F) oven: 20-25 minutes for cupcakes; 35-40 minutes for cakes. Allow cake to cool completely before frosting.
Directions for Cream Cheese Frosting :
Prepare the Cream Cheese Frosting. In an electric mixer, combine cream cheese and butter. Begin adding powdered sugar, creaming thoroughly after each addition. Mix in vanilla and cream. Continue adding powdered sugar until frosting has a pearly sheen and thick, gooey yet spreadable consistency.

Homemade IKEA Meatballs


All you need is ;

For the cream sauce;
Ingredients: 

100ml cream
200ml beef stock
Soy sauce
1 tbsp white flour
Salt, white pepper


Instructions:

1.) Swirl the boiling water or beef stock in a pan.
2.) Add cream and thicken with white flour if preferred.
3.) Season well with salt and pepper.
4.) Serve the meatballs with the sauce, freshly boiled potatoes or shoe strings, uncooked lingonberry jam and your favourite salad. 

Meatballs, ready made from IKEA, you can find it at any IKEA store :)


It does really tastes the same! :D

Puding Buih


Bahan-bahan
  • 1 paket agar agar strip (bertali - lebih kurang 35gm) - rendam dalam 1/2 jam dan toskan
  • 1.8 liter air
  • 9 sudu besar gula
  • 1 helai daun pandan - disimpul
  • 6 biji telur gred A - simpankan 1 kuning telur utk dimasukkan ke dalam kuah
  • 1 tin fruit cocktail - optional
  • pewarna dan paste ikut citarasa - kalau taknak guna paste perasa guna esen vanilla untuk hilangkan rasa hanyir telur
Untuk Kuah
  • 1 tin susu cair
  • 2 tin air (guna tin susu cair)
  • 7 sudu besar gula
  • 2 sudu besar tepung kastard
  • 1 biji kuning telur yg diambil dari 6 biji telur tadi
  • 2 helai daun pandan - disimpulkan
  • 1/2 sudu kecil garam
 Cara-cara
  • Masak agar agar bersama air, gula dan daun pandan hingga mendidih. Bila dah mendidih masukkan pewarna dan paste mengikut citarasa masing masing. Kacau sebati.
  • Bila agar agar dah suam suam panas, pukul telur hingga betul betul kembang dan gebu. ( 6 putih dan 5 kuning sahaja ya). Gunakan mixer. Pukul dulu putih telur hingga menjadi kembang (kalau kita terbalikkan mangkuk tu dia tak tumpah) baru dimasukkan kuning telur satu persatu sambil dipukul lagi hingga betul betul kembang dan gebu.
  • Tuangkan adunan agar agar ke dalam adunan telur dan pukul dgn mixer hingga sebati. Masukkan kedalam acuan. Biarkan sejuk barulah dimasukkan kedalam peti ais.  
          Cara membuah kuah :
  • Masukkan kesemua bahan kedalam periuk dan masaklah hingga mendidih. Kuah ini hendaklah sentiasa dikacau supaya tidak berketul. Bila dah mendidih, tutup api dan biarkan sejuk. Bila dah sejuk masukkan dalam peti ais.
  • Bila nak menghidang, letakkan puding ke dalam mangkuk dan curahkan kuah. Sedap dimakan masa sejuk.

Rocky Road Brownies :)


Makes about 2 dozen

Ingredients

2 cups of Semisweet Chocolate Chips
1 1/4 cups of All Purpose Flour
2 Tbsp of Cocoa Powder
1 ½ tsp of Baking Powder
¾ cup of Granulated Sugar
1/4 cup of Brown Sugar
6 Tbsp of Unsalted Butter, at room temperature
Pinch of Salt
1 tsp of Vanilla Extract
2 Eggs
2 cups of Mini Marshmallows
1 ½ cups of Walnuts, coarsely chopped

Process ;

1) Preheat your oven to 375 degrees. Spray a 13x9inch or (approximately this size) baking pan with non stick cooking spray and lay the bottom with parchment paper.
2) Add 1 cup of the chocolate chips in a small bowl and melt in the microwave or melt using a double boiler technique and set aside. 


3) In a large bowl, cream together the butter, granulated sugar and brown sugar, add the eggs and vanilla and mix until combined. 

4) Add in the melted chocolate and beat until smooth.
5) Beat in the dry flour mixture and spread this mixture evenly in the prepared pan. Bake for about 18 to 20 minutes or until a toothpick inserted in the center comes out slightly sticky.


6) Remove from the oven and sprinkle evenly with the marshmallows, remaining chocolate chips and walnuts. Return to oven for 2 minutes or until the marshmallows begins to melt
6) Let them cool for about 30 minutes and cut into bars.

Red Velvet Cupcakes with Cream Cheese Frosting


Makes 11 to 12

Ingredients:

1 ¼ cup of all Purpose Flour
2 Tbsp of Cocoa Powder
½ tsp of Baking Powder
½ tsp of Baking Soda
¼ tsp of Salt
¼ cup of Unsalted Butter, softened at room temperature
¾ cup of Granulated sugar
¾ cup of Buttermilk
1 Egg
1 tsp of Vanilla Extract
Red food Coloring

For the frosting,

2 Cups of Powdered Sugar
4 oz of Cream Cheese, softened at room temperature
2 Tbsp of Unsalted Butter, softened at room temperature
1 Tbsp of Milk
1 tsp of Vanilla Extract


Preparation,

1) Preheat your oven to 350 degrees. Line a muffin pan with cup cake liners and set aside.

2) In a small bowl mix together the first 5 ingredients and set aside.In the bowl of an electric mixer fitted with a paddle attachment, cream together the sugar and butter, add the egg and vanilla and mix until well combined and creamy.

3) With the mixer running on low, add half of the dry ingredients and half of the buttermilk, make sure its combined and add the remaining dry ingredients and buttermilk making sure to combine everything together but not over mixing.Using a spatula mix the batter from the bottom to make sure nothing is left stuck to the side of the bowl, add enough food coloring to get the desired red color for your cupcakes.

4) Using a large ice cream scoop, scoop the batter evenly in your prepared pan and bake for 18 to 22 minutes or until when you insert a toothpick in the center it comes out clean.Let the cupcakes cool completely.

5) To make the frosting simply put all the frosting ingredients into the bowl of an electric mixer and mix until well combined and it has the consistency of a thick frosting.Frost the cupcakes either with a little spatula or using a disposable piping bag fitted with a plain large tip.

6) Let cool in the fridge for about 10 to 15 minutes to set a little before serving!

Roasted chicken rice



Chicken rice
Serves 2-3 adults

1 cup jasmine rice
2" ginger, pounded
1 cube chicken stock
1 3/4 cup water
1/3 tsp turmeric powder
salt & sugar to taste
3 tbsp butter

1. In a bowl, mix water with turmeric powder and chicken stock.
2. In a pot or your rice cooker, heat the butter and saute ginger until fragrant.
3. Add in rice and stir a couple of times.
4. Add water.
5. Add salt and sugar to taste and stir a few more times. Let it boil.
6. Cover and simmer for 20-25 min, depending on your stove or rice cooker.
7. Once cooked, let it sit for 5-10 min (covered).

Served warm with Roasted chicken. Garnish with fried shallot/onion.

* If you are using chicken broth instead of cubed chicken stock, just replace the amount of water with chicken broth. Too much water/broth will make your rice too starchy.

Roast Chicken
1 whole chicken,
3" ginger, pounded
3 garlic, pounded
2 tbsp light soy sauce
1 tbsp sweet soy sauce
2 tbsp honey
1 tsp salt
1/2 tsp five spice powder

1. Trim of excess fat from chicken, rinse and pat dry. 
2. In a bowl, mix all the ingredients.  
3. Rub the chicken inside and out
4. Cover the bowl with plastic wrap and put in the fridge overnight. Or you can just marinate it for a couple of hours before roasting.
5. When ready to roast, preheat the oven at 350F
6. Place the chicken in a roasting pan. If you have a wooden skewer, use it to 'tie' the legs together. But I dont have it so i didnt use any. Then cover the chicken with aluminium foil. 
7. Roast for 45-60 min.
8. Uncover and set the oven to 450-475F and continue roasting for another 10-15min or until the chicken is fully cooked. 
9. Remove chicken and cut into desired pieces, preferably when it has cooled down a little bit. 
10. And you're ready to serve with chicken rice and salads :)

Molten Choc Lava Cake


 All you need is ;

2 eggs
1 cup of all purpose flour
1 bar of cooking chocolate
1/2 cup of white sugar
3/4 cup of butter

1.) Melt the chocolate using a double boiler technique.
2.) As the chocolate is all melted, turn the heat off, and add in the butter as the heat from the chocolate will melt the butter.
3.) Beat the eggs and sugar until well mixed.
4.) Pour in the chocolate and butter mix into the eggs and sugar.
5.) Mix well and scoop into small glasses or small porcelain bowl or paper cups will do.
6.) Bake at 180 degrees for 10-15 mins depending on how molten the cake you want to be.
7.) Aaandd you're done! Best serve hot with vanilla ice cream :)
