For the meringue mixture ;
4 egg whites
1 cup sugar
1 teaspoon lemon juice / white vinegar
1 teaspoon vanilla extract / almond extract if you prefer
2 teaspoon cornstarch
2 cups whipping cream
1/2 cups icing sugar
Fruits for topping and dressing
For the whipped cream ;
1/2 cup icing sugar
2 cups whipping cream
1.) Line a baking pan with parchment paper and draw a 9-inch circle at the center.
2.) Beat 4 egg whites until stiff. *Be careful do not overbeat
3.) Add 1 cup sugar, a little at a time, beating well after each addition. Beat until smooth an glossy, but do not overbeat.
4.) Fold in other ingredients - vanilla/almond extract, lemon juice/vinegar, cornstarch.
5.) Spread meringue mixture onto the prepared baking pan.
6.) Build up edges so that there is a nice indentation in the center of the meringue so that later it is easier to fill in the whipped cream :)
7.) Next let it set in a bit and bake it for 1 hour at 150 degrees celcius.
8.) Remove from oven and cool in pan on wire rack.
9.) Next as the meringue is cooling, you can start making the whipped cream.
10.) Mix all ingredients and beat until smooth and stiff peaks form.
11.) Let the meringue cool completely and spread the whipped cream and line on the fruits gorgeously.
12.) Let it chill in the fridge for about an hour or so, and you're ready to serve!
Happy trying,
much love,
